Strangers on a Train

To close a fabulous summer, I spent the last week of August in Montreal, Canada with one of my best friends. I travelled by train on Amtrak's photogenic Adirondack Route, a straight shot north through New York state by way of the Hudson River and Lake Champlain; lodged at a eco-conscious hostel in Old Montreal that was bohemian enough (at $25 dollars a night) not to have air conditioning; and met the most extraordinary woman on the journey home.

hi there, sorry i am just now responding to your friend request. I'm in my last year of college and this time of the year gets pretty busy. I can not wait until I am done with school, although I am nervous about finding a job after school.

We do have very similar interests! since I see you are in to the arts, what is your favorite artists or style? I am some-what new to the art world. I took a class four years ago in art history and have taken a few classes every semester, I think I like post-modern and expressionist work, but I couldn't tell you who my favorite artist is, I like so many.

And I see you like history, as for me I am getting my major in history and a minor in inter-cultural studies/anthropology. So I definitely have to ask what history do like. I am getting a double concentrated major in the history of women and just a general European history concentration.

I could go on asking questions and discussing things, but I think that will do for now. It is very nice to meet you Elizabeth and I look forward to hearing from you. Have a good night.

Hello Elizabeth :) My apologies for taking so long to reply to your comment/questions. I've tried a few different brands of vitamins. Right now, I'm taking RealFood Organics Her Daily (available online & @ most Whole Foods) - the recommended dose is 2 or 4 pills/days. I just do 2 because taking 4 a day makes the pills quite expensive. I prefer multivitamins that are made with real food - just makes more sense, don't you think? I've been taking RealFood Organics for at least 2 years now & really like them. The other brand I've been thinking about trying is Alive! (they have 2 women-specific versions)

MMm, soup, another one of my favorite subjects! Naturally, I'm going to recommend organic stock over non-organic, which just about every store carries these days. I usually just use Whole Foods version or any organic brand that I can find at my local big box grocery store. If I can't find organic, I at least get a lower-sodium version.

Dear Elizabeth,

I am very thankfull you left a comment on my blog, so I've been able to know you. I felt so close to what you were so "brilliantly" (? does the word exist, I'm French) describring. It is not easy to let it go and write all what you are going through in you mind on a blog. But reading you made me feel more "linked" than ever to one person in the community.
I went through tough time during the Plan, not because of it, but because of my personal landscape which is kind of collapsing. Paradoxally, I've been trying to stick to the Plan, totally aware it was big support, practising Yoga and preparing my daily soup in a meditative way, but my mind totally up and down. Now I know I am not as below as I would have been if I hadn't had this everyday coaching to help me.
I really feel the necessity to read more and hopefully, I did go on writing, such a necessity.
How could we keep in touch, do you have your own blog?

Elizabeth, you really write so beautifully, with such sincerity, humor, and emotion. I spent the last twenty minutes reading all your blogs and I just love them. Hey! I just winged it on the homemade almond butter. I took about 1/2 cup almonds, a splash of of canola oil & you could use a pinch of salt if desired. Threw them all in my food processor and pulsed until it turned into a paste, which does take a few minutes. Sorry the measurements aren't too precise... maybe a splash of canola oil was like 1 tbsp and like 1/4-1/2 tsp salt? I used salted almonds so I didn't add any extra. It probably yielded around 1/2 cup, as shown in the picture on my blog. A little bit gritty, but not bad overall!

I've also made peanut butter this way and liked it. You can add in chopped up peanuts if you like a chunkier spread. I keep both the almond butter and PB in the fridge to help them last.
