Finally I'm excited about cooking again! I went to a terrific East Indian cooking class on Thursday and came home with some wonderful recipes to try.
The first dish I made was not East Indian but a delicious cassoulet! Into a large dutch oven went a layer of onions, pieces of spicy Italian sausage and chicken and then a layer of partially cooked orca beans. I poured liquid over top and seasoned it up with bay leaves, garlic and rosemary, salt and pepper, covered and baked slowly…

I have signed up for a series of fabulous cooking classes that happen every few weeks. So far I've enjoyed "Canning and Jamming", "Moroccan Mystique" and "Into Africa".
I would like to share a couple of recipes from Morocco and Africa.
Dates with Goat Cheese served on greens
2 pkg (113 g ea) goat cheese
1/2 cup cream cheese, softened
1 tsp. grated lemon peel (organic lemon, washed)

Dawn Heefner said… Check out TOPS.org for something in your area. Exercise is something you figure out on your own but we encourage walking. We are all huge fans of Leslie Sansone's Walk at Home program. Here DVDs are great. You can get them at Target, Amazon or QVC. But if you can't go outside to walk, you can walk at home. Just get moving. The best exercise is something you're going to do. A power partner always helps too. (If you don't feel like walking, you don't want to disappoint them and you want success for them too.) Yoga may be an option. It's low impact but really gives you core strength which you lose as you get older. (I'm 45, so I'm coming up on the peri stuff). You're goal is not impossible! At least you have a goal. If you aim for nothing you'll hit it every time. Write down your goals and go for it. It's your time - it's your turn!
Dawn Heefner said… Hey Plexy - I guess I had to be a friend to comment. But you can start now with getting rid of that 50 pounds. I belong to a TOPS group which is a support group for weight loss. Local and nonprofit!! Accountability weekly. I still have 10 pounds to go which has been a struggle but this is a lifestyle change. I refused to only eat salads and eat what I like. I'm experimenting all the time with new recipes and only recipes with nutrition facts included. I love the Everyday Food magazine because they are in season with foods and every recipe has nutrition facts.
