Ok, I am pledging to (TRY to) go dairy-free for one month. I am also French and Italian, cheese is in my blood, I have about three types in the fridge right now. Ive heard a lot about how dairy messes with your digestion, nasal passages and skin and I've had enough of all three problems and I'm testing out a dairy-free month. Im on day 2, actually, more like day 1.5 since I got my coffee yesterday morning automatically with milk, just habit (d'oh!)

Does anyone have any good recommendations for dairy substitutes for cheese? I cook a lot with it, in fact, Im making a pesto tonight and am lost on what to substitute for Parmesan that my boyfriend wont cringe at the taste of and kick me out of the house.

Advice welcome!

And did anyone try this and did it help with anything?

Thanks Donna! Ive sworn off milk in my coffee for now and have had the very OCCASIONAL piece of cheese here and there but have been holding up pretty well (lets all pretend I didnt have that cupcake earlier this week...)

I have observed the following-my sinuses are completely CLEAR now. Amazing change really. My skin is still acting up on me, but I think its hormonal/stress-related.

Hi Nicolette,
Miso can be used as a cheese substitute; also nutritional yeast flakes on top of pasta or in salads. My husband, Chef Al, makes a delicious condiment with miso for his tempeh reubens. Also, you can use nuts. There are many recipes for these substitutes... google vegan cheese recipes. Also, there are organic vegan cheeses on the store shelves like Daiya or Follow Your Heart.
