We made one of my favorite meals -- a winter vegetable shepherd's pie. Instead of making new mashed potatoes to layer over the cooked vegetables, we used the Thanksgiving leftover mashed potatoes and a turkey stock we'd made with our leftover turkey instead of store-bought broth. It was an amazingly delicious meal shared with family and friends.

We had turkey leftovers for lunch -- turkey, stuffing, and cranberry sandwiches :) Okay, okay - I went shopping on black Friday, BUT - we went to Old Town Alexandria, gave our stuffing scraps (I cut the crust off the bread) to the ducks, and walked the beautiful streets shopping for a bit. On our way home we stopped at our favorite neighborhood pizza place for a great dinner. We will share leftovers tonight with our neighbor who just came home from Africa!

I'm with you, Victoria. I never shop on Black Friday, nor do many people I know. To me, gifting should be a joyful experience, not one filled with chaos. And leftovers? I have one lone sweet potatoe casserole to which I will add a green bean dish and chicken breasts. Thanksgiving was low key this year and a little rough being the first one without my dad. Still, we have much to be thankful for and I celebrated what I consider what Thanksgiving is about, the bounty of friends, family, and lasting memories.

I never toss the leftovers. I make tetrazinni, soup from the bones and even pannis with the stuffing and cranberry sauce.

Linda - yes, today is Black Friday, but I never shop on this day. Of course, this year, I'm not buying ANYTHING & just spending quality time with family. Today, I will certainly be eating leftovers ... would be a perfect day to make turkey soup :)

I think this is tomorrow's challenge question!! Isn't this "Go Shopping Day" in the States? Not a very calm, contemplative experience methinks.
I will be eating leftovers today but it won't be turkey and the trimmings.
