So it's been a few weeks since I posted about my vegetarian adventure, but that doesn't mean I've fallen off the wagon -- I'm still going strong, although there's certainly room for improvement!

To kick off our 40 days of vegetarianism, Anthony and I headed to Fairway, the giant supermarket in South Brooklyn, to stock up on new and exciting plant-based ingredients. (No, I don't consider canteloupes new and exciting, but I just loved the smiley face. It was symbolic of my optimism during the shopping trip!)
We stocked up on lots of fruits, veggies, and whole grains. We spent several minutes in front of the confusing aisle filled with all the differnt types of grains -- coscous, millet, bulger, oh my! We settled on some quinoa, flaxseed, polenta, and a few different whole grain hot cereal mixtures from Bob's Red Mill. We're general a plain old pasta and oatmeal household, so experimenting with all of this was really fun!
One of the first nights of our meat fast, Anthony made
eggplant caponata with polenta, pictured above, inspired by Miss Giada's show on the Food Network. I was surprised at how filling it was, and I loved the flavors together. (The polenta, however, I did not like -- too plain and not enough flavor for me.)
The most delicious thing we've eaten so far, though, was this
butternut squash and apple soup. So rich and amazing! We didn't bother to make the pesto garnish, but it was just fine on its own.
So, so far so good: We've definitely had our fair share of pizza, and I'm eating whole-wheat pasta with vegetables almost every day at lunch. I'm not sure if I'm getting enough protein, but I'm trying to include more beans and soy. But more about that later!
I know that some of you are still detoxing (or just finished), and others have set your own nutrition goals
(Liz: no bread!) for New Year's/Lent/Biggest Loser competitions/other reasons. How are you all doing? Reading about your progress helps keep me on track!
