It's Memorial Day: Do you know where your vegetables are? Hopefully they're on a grill somewhere, on their way to char-grilled perfection. Today's challenge: Eat a grilled veggie.


Give the oven and the microwave a rest today. Sure, you can eat your veggies boiled, raw, or steamed, but few vegetables are as delicious -- and as fun! -- as those prepared over an outdoor grill. Top your burger with grilled peppers and zucchini, string up a vegetable kebab, or enjoy an ear of corn on the cob. Thanks Whole Living -- as a result of the May 31st challenge I decided to roast my brussels sprouts that I was taking to a dinner party. They turned out great! Everyone loved them. Thanks for the great idea!

I hear grilled corn is fantastic - just bought some fresh sweet corn two days ago & am itching to try it. :)

I love roaster vegetables. Today I'll roast cauliflower.
