Pumpkin seeds are packed with zinc and fatty acids that benefit the heart, says Esther Blum, a nutritionist in New York City and author of "Eat, Drink, and Be Gorgeous." So don't toss them out after carving your jack-o'-lantern. Lightly toast them in the oven (at 250 degrees for 20 minutes), and then sprinkle with sea salt -- or try this spiced version. This year does not look like any other ......I spent 6 months in Europe and one week after my return to WA, we have been away another week to San Francisco. We really had no time to spend on halloween decorations nor at any pumpkin patch ...We are flying back home tomorrow though.... We usually love carving pumpkins & get ready for the children in my neighborhood but ......not this year. I will probably catch up on those roasted pumpkin seeds another time ......maybe during our Thanksgiving weekend when our friends will come & stay with us. Have a fun time all of you with the children tomorrow....

A great seasonal thing to do! My kids always really enjoyed it, even when they grew up. Sadly, this may be the first year we haven't carved pumpkins and have no seeds to roast.

I am taking my family to the pumpkin farm today so we should have lots of pumpkin seeds to roast this evening :)
