Hi Susan! You can think of a serving as about one cup of sliced or chopped (or baby) carrots. You should cook them with olive oil (the healthy fats will help your body better absorb the nutrients) or steam them. If they're overcooked though (think mushy carrots), they can lose some of the beta-carotene that makes them so healthy. I don't buy iceberg lettuce anymore. I substitute spinach in almost every place I used to use it. Raw carrots are a great substitute for chips when I want a crunchy snack. A 1/2 cup is about 1 serving.

I know I should eat more carrots, how much is a serving and are they as healthy cooked?

This is a great idea for most people, however, I worked for a hepatologist [liver doctor] who had a patient who ate so many carrots that they gave themselves hepatitis, a very serious liver disease with lasting consequences. Carotenoids are very high in Vitamin A, which is toxic to the liver in *high* doses. Again, most people will act with moderation, but there is always the except to the rule. Please use moderation and enjoy normal portions.

We eat the sweet potatoes instead of the regular ones throughout the year. We got hooked on the crunchy baked sweet potato fries :D
We add spinach to our burritos instead of any other kind of green leaves :D

That's an easy challenge! I love carrots, sweet potatoes, and oranges. Lucky me - happen to have all three in the house.
