For my detox prep, I invited my mom & sister over for our weekly dinner and made Roasted Sweet Potato and Curried Apple Soup.

Success. The recipe calls for a bit more time than the standard Throw Everything Into A Pot and Wait For An Hour soups, but it was well worth it.


I roasted the potatoes, caramelized the onions and sauteed the veggies a day ahead. Simmered everything together for 20 minutes and then left it in the fridge. Last minute I did the food processing and curried apples and voila! A delicious, plan-approved, vegetarian and vegan soup. Delish.

I am totally in love with sweet potatoes too, (while I was in Korea I even had it on my pizza, delicious). I also did a variation of a similar vegan soup, but mine was butternut squash and apples. It took me a while to make, but I wanted to do it pre-detox so I would have it ready to eat. It is super yummy, but since I love sweet potatoes maybe I will try those next time.
