I am absolutely crazy about sweet potatoes! They have come so far since they shed the sweet mantle of marshmellows (I liked those, too!) We eat sweet potatoes at least 3 times per week. Yummy!!

I was all set to have couscous with dinner and then I remembered the challenge. I enjoyed a baked sweet potato with my chicken and apples dish. It was perfect!! Thanks for the challenge.

Shaleah : Indeed, very few voters for these sweet flesh edible Central American tubers. They are a big hit in warm countries as I understand .....have you already checked how long you can store them at room temperature without spoiling ?

I love sweet potatoes! I was a little surprised to see as many 'no's' out there as there is. :S We do all have different taste buds I guess.

Just bought sweet potatoes last night - LOVE them! I will try the baked sweet potato "fries" recipe that came with today's email. What fun!

We just stocked up 10 lbs of them & I really missed "my sweet potatoes" while I was away for the past 6 months.... We like them CRUNCHY just like.......baked fries.........

I love them roasted with a little salt despite their sweetness I still prefer them savoury unless we are talking PIE :)

In just the past year, I've found that I REALLY like sweet potatoes - yet another wonderful vegetable to add to my repertoire :)
