Here's my cornbread recipe, as promised:
Cornbread
1/4 C olive oil
1/2 C cornmeal
1/2 C polenta
1 C whole wheat flour or kamut flour
4 teaspoons baking powder
1 C milk
1 egg, beaten
1/4 C green chilies (optional)
1/4 C drained, canned or frozen corn (optional)
Heat oven to 400 degrees. Pour oil in cast iron skillet and heat in the oven. Tilt skillet to coat evenly with oil. Combine dry ingredients. Add hot oil, milk and egg. Mix. Stir in green chilies or corn if using. Pour batter into hot skillet. Bake 20-25 minutes or till golden brown.
